The pasta roller transforms your homemade pasta dough into beautiful, thin sheets. This handy stainless steel roller is an optional attachment that securely fastens to the hub of your stand mixer. With 8 thickness settings, you can roll the dough to your desired thickness. Always start with the widest setting (number 1) and gradually increase the level as you continue to feed the dough through. For tagliolini, you’ll need thicker sheets; for lasagna, a medium setting; and for linguine or capellini, the dough must be rolled very thin. At each level, the dough should be passed through the machine at least three times, folding and feeding it again each time. Don’t forget to dust the dough with flour to prevent it from sticking. Your pasta sheets will be up to 14 cm wide and perfectly smooth and even – ready to be cooked or further processed using the KitchenAid pasta cutter (sold separately).
