This interruption prevents the so-called eruption phase - the last filtration step that produces a burnt and bitter aftertaste - and ensures that only the best qualities of the coffee are retained, thus enhancing its full-bodied and rounded aroma. The spout is clearly defined: its characteristic V-shape, reminiscent of a chick's beak, has been specially designed to pour without dripping.
